responsible for the implementation, administration and maintenance of cost control system and procedures at the hotel to track Food & Beverage (F&B) and Housekeeping (HK) budgets, commitments, expenditures and forecasts. An Inventory Controller monitors and maintains current inventory levels; processes purchasing orders as required; tracks orders and investigates problems. Records purchases, maintains database, performs physical count of inventory, and reconciles actual stock count to computer-generated reports. Cost Control Considerable knowledge and ability to identify and reduce business expenses to increase profits which usually starts with the budgeting process • Provide analysis of housekeeping consumables & food & beverages consumption costs on a monthly basis and making recommendation of alternatives on cost savings. • Maintain the HK consumables & F&B costs, updated on a regular basis (Daily for F&B & Weekly for Housekeeping). • Establish and maintain a database for HK & F&B inventory stock including up-to-date pricing. • Coordinate, attend and monitor all HK & F&B physical inventories to ensure accuracy. • Prepare the costing for recipes and menus prepared by the Executive Chef and suggest the selling price. Update SP per costs. • Verification of production and spoilage report. • Account and monitor any stock transfer between stock rooms and outlets. • Carry out spot-checks on the hotel stores rotating stock-takes. • Performs other related duties as requested Inventory Control The Inventory Control Specialist will maintain the organizations inventory, ordering and supplying necessary items while maintaining accurate records of all procurements. • In-charge of physical store room and maintains consistent stock of inventory, ordering new stock up to pre-authorized limit as inventory dwindles. • Assesses inventory reports and order patterns to identify items in need of automatic, recurring delivery. • Provides inventory reports. • Maintains accurate daily records of goods/items requested, received and issued. • Manages and maintains inventory system; facilitates upgrades to related database and/or software. • Conducts weekly/monthly physical inventory. • Assists with period physical inventory audits. • Performs other related duties as requested. SOP Compliance Awareness and adherence to all standard operating procedures, including timeliness, related to the competencies required for this position. • Ensure timeliness and accuracy in computing and reporting. • Observe proper closing procedure & follow the End of Day Checklist • Actively handles matters related to hotel inventory and cost control Organizational Dynamics Understand organizational structures, relationships and influencers and effectively build partnership and networks. • Liaise closely with the FO, PD, HK & F&B departments on various operational and cost related issues • Maintain a cordial relationship with suppliers in order to get the most up-to-date pricing for inventories and supplies.
